These refreshing cucumber canapés are a quick-to-make appetizer made with creamy hung curd, roasted cherry tomatoes, and fresh dill. Light, protein-rich, and hydrating, they are perfect for athletes wanting a healthy snack or an elegant party bite that supports recovery and clean eating.

Ingredients

For hung curd/ Greek yogurt mixture
  • 70 g hung curd/ Greek yogurt
  • Salt to taste
  • A pinch of black pepper
  • ¼ tsp lemon juice
For roasting tomatoes
  • ½ tbsp extra-virgin olive oil or any oil
  • 35 g / 5 cherry tomatoes, halved
  • Salt to taste
For canapés
  • 75 g / ½ English cucumber, sliced thickly (about ½ cm)
  • 1 tsp / 6 g hung curd for each canapé
  • Roasted cherry tomatoes
  • Dill leaves

Method
 

For hung curd/ Greek yogurt mixture
  1. Take hung curd in a mixing bowl.
  2. Add salt, black pepper, and lemon juice, then mix until smooth and well combined.
For roasting tomatoes
  1. Heat olive oil in a pan.
  2. Add cherry tomatoes and salt to taste.
  3. Roast them over medium flame until they soften slightly.
  4. Turn off the flame and keep aside to use later as a garnish.
For assembling the canapés
  1. Spread 1 tsp of prepared hung curd mixture on each slice of cucumber.
  2. Garnish with roasted cherry tomatoes and dill leaves.

Notes

  • Use any variety of cucumber and tomatoes that are easily available in your local market.
  • You can prepare the hung curd mixture in advance and store it in the refrigerator for up to a day or two.
  • If making in summer, keep the assembled canapés in the refrigerator to chill.
