Ingredients
Method
- In a medium saucepan, add the blueberries, sugar, and lemon juice.
- Cook on medium flame until the berries release their juices and the mixture comes to a simmer. It will take about 3-5 minutes.
- Reduce the heat to low and gently mash the berries with the back of a spoon.
- Continue simmering for 8-10 minutes or until the compote thickens to a sauce-like consistency.
- Taste and adjust the sugar or add more lemon juice if needed.
- Remove from the heat and allow the compote to cool completely.
- Place the hung curd in a mixing bowl and whisk until smooth and creamy.
- Add the prepared blueberry compote and honey.
- Whisk until the mixture is fully combined.
- Pour the mixture into popsicle moulds.
- Freeze for 4-6 hours, ideally overnight, until completely set.
