Nutty Date Bites

These Nutty Date Bites are packed with almonds, cashews, walnuts, dates and dried figs. They are easy to make, free of refined sugars. Wholesome, delicious, and performance-friendly!

Ingredients
  

  • 80 g/ 10 dates seedless
  • 30 g/ 3 dried figs
  • 5 g/ 12 golden raisins
  • 25 g/ 20 almonds
  • 20 g/ 12 cashews
  • 15 g/ 5 halves walnuts
  • 5 g/ 1 tbsp desiccated coconut optional
  • 5 g/ 1 tbsp white sesame seeds optional
  • 1 tsp ghee/ neutral oil/ coconut oil
  • A pinch of green cardamom powder

Method
 

  1. Soak the figs and raisins in hot water. Cover and set aside for 20 minutes. After 20 minutes, drain the water and blend into a coarse paste.
  2. Grind the nuts into small pieces or chop them finely.
  3. In a pan, heat ghee and add the sesame seeds. Sauté on low heat until the seeds start to crackle and change colour.
  4. Stir in the desiccated coconut, careful not to let it brown.
  5. Add the ground nuts and sauté for 3 to 4 minutes over low heat or until they turn light brown.
  6. Turn off the heat, add the date paste and mix well.
  7. Add the green cardamom powder, mixing thoroughly.
  8. Allow the mixture to cool until it's warm enough to handle.
  9. Grease your palms with ghee and roll the mixture into a log.
  10. Let the log cool at room temperature, then slice.
  11. Store the leftover pieces in the refrigerator.

Notes

  • Instead of shaping the mixture into a log, spread it onto a greased plate and cut it into rectangles or squares for easier serving.
  • Feel free to incorporate your favourite nuts, just keep the total amount of nuts the same.
  • You can substitute poppy seeds for sesame seeds, or use both in equal amounts, such as 1/2 tbsp of each.
