Cut the potatoes into wedges, keeping them moderately thin (ideally no thicker than ½ inch).
Place the wedges in water as you cut them to prevent discolouration.
Once all wedges are cut, drain the water and pat them dry using a kitchen towel.
Transfer the wedges to a mixing bowl.
Add olive oil, salt, red chilli powder, oregano seasoning, and crushed black pepper. Toss well to coat evenly.
Arrange the wedges in a single layer on a baking tray lined with parchment paper.
Roast in a preheated oven at 200°C (390 ℉) for 15 minutes.
Flip the wedges and roast for another 15 minutes.
The wedges should turn golden brown and crispy on the outside.
Serve hot with a dip of your choice.
